Chocolate Cake in a Mug
Darlene sent this recipe for chocolate cake in a mug. Maybe you have seen it before. You make it in the microwave and it's very good. I tried it the other night and added walnuts to mine. I was going to make it earlier but waited until we had ice cream in the house. I only cooked mine for 2 minutes and it was ready. I used a big mug.

I tried the chocolate cake in a mug. It was a fun suggestion. We're empty nesters, so we don't make a whole cake, or we'll eat the whole cake! This was pretty easy and entertaining to make. It was so funny how the cake just shot straight up like lipstick coming up out of a lipstick tube. But held its shape. I used eggbeaters, not having any eggs on hand, and it worked too. Although the finished product was sort of rubbery, either from eggbeaters, or because I cooked it the whole 3 min. But it still tasted okay. Adding chocolate chips and walnuts, plus ice cream would have really improved it I'm sure. But hubby and I shared it, and it was a fun way to have one piece of chocolate cake.
